Think those pumpkin lattes are where it’s at?
Try this easy recipe for the same taste without the chemicals that your favorite barista uses to get that “pumpkin taste.”
It’s a great way to get a deeply colored veggie – pumpkin – and your greens. AND, it tastes like pumpkin pie in a glass!
- ¼ cup raw almonds
- 1-½ cups of water
- 1 – 2 dates – pit removed
- ½ teaspoon vanilla
- 1 cup cooked pumpkin*
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- Pinch of ground cloves
- 1 cup of greens – kale, collards or other
Place almonds, water, date and vanilla into your high power blender and blend until milky. Add the remaining ingredients and blend until smooth. More water can be added if you like your smoothie thinner.
*I roasted my own. If you’re using canned, go with 1/2 cup.
